Quick & Easy Saturday Brunch Recipe

I felt bored this morning and said to myself: "Let's do something fun in the kitchen." I headed over there, looked in the fridge and found eggs, avocados and cheese and thus, this recipe was born.

Well, I might've googled as well, a girl needs some help.

So, here's a recipe for stuffed egg avocado, it's perfect for any meal either breakfast, brunch, lunch, dinner, whatever you like. This recipe is also low carb/ketogenic so, if you're following such diet, this is perfect for you. Even if you're not, try something healthy for a change.

And just to mention, it's very quick and easy, you only have 6 simple steps to take and it'll be ready in less than 25 minutes.

Ingredients for one

  • 1 avocado
  • 2 eggs
  • 2 slices of cheese of choice
  • basil
  • salt, pepper... whatever else of spices you'd like


Preheat the oven to 220°C (425°F)

Crack the eggs in the separate bowls, be careful that the yolk stays steady. 

Cut an avocado in half and take out the large stone out of it:

Now, gently put each egg into each slice of avocado, continue spooning egg white into the hole until full. You can also use a spoon to dig deeper so, it would have more space and won't fall over. 

Cut two slices of cheese and place it onto each slice of avocado, season it with pepper, salt and basil and put it into the heated oven.

Bake for 10-15 minutes (depends on how much you want it to be roasted), get out of the oven, serve on a nice plate and...
